How to strip "Connect" App

It is optional feature called "Wireless display". I don't even have it installed on untouched Win10 21H2 by default so seems like you added it manually or installed it later on?

Wireless Display was removed from more current W10 images, it's available from Store or needs integration from the optional Features On Demand (FOD).

OGY is running release 1803, where Wireless Display is on the ISO.
 
A Wireless Display is detected by Windows when the display is on and compatible, you have to do nothing because a notification will popup to let you know that the display is ready to connect.

Wireless Display is integrated in Windows 11 and I need to try Win 10, probably there is basic Windows 10 wireless display integrated in latest builds.

Starting with W10 2004, it moved off-line to the FOD ISO. I just checked.
 
In Components > Windows Apps, unmark PPIProjection. Connect will be gone.

Careful if you use Miracast, removing that breaks its Support for some TVs (samsung especially)
