Remove Microsoft Defender in Windows 11 Enterprise LTSC

I am customizing a Windows 11 Enterprise LTSC 2024 ISO image (en-us_windows_11_enterprise_ltsc_2024_x64_dvd_965cfb00).

How can I remove all the Microsoft Defender components including smart screen and antivirus? I do not see the option in the components section. (I have a licensed copy of NTLite and I am using the latest version)

I see the problem. I was working with an already customized install where I had removed Defender. I started over with the default image but now the XML file with the settings is missing a ton of customization. So I have to start from square one.
