Is it true that if I set Telemetry to Security in Windows 10 Enterprise I won't be offered CUs and so I should set it to Basic? And what if I removed Unified Telemetry Client (Asimov)?

Haven't heard of such a limitation.
You can tweak or remove telemetry, Windows Updates should work fine and report latest updates. If not, attach the preset used on non-patched ISO, and I'll verify.

An user in My Digital Life Forums told me and I searched just to be sure and found this.

It can't be removed or tweaked? Then how can one set it to Security, Basic, etc.? I integrated the updates so I didn't even wait for them to be released in Windows Update just to know if I could install them.
