Is it ok to remove UAC if one always disables it anyway?

I'm not using metro services as far as I know.

By the way, does metro services mean xbox app, weather app etc?

As the name says, Metro services are services for UWP apps, lets say Windows (system and non system) Apps and Microsoft store apps.
Metro services is needed by Settings app, applets from Control Panel now are built in the Settings app.

Removing UAC will give you issues, try starting Windows in safe mode and you'll be not able to run some programs, that would be as if UAC has been removed in normal mode.
